Ingredients for 4 servings:
- 10 g fresh ginger
- 1 bottle of sparkling wine, dry
- 5 tbsp sugar
- 3 tbsp brown sugar
- 1 tbsp chili flakes
- ½ lime(s)

Peel and finely grate the ginger. Heat 100 ml of sparkling wine, ginger, and 5 tablespoons of sugar in a saucepan, stirring constantly, until just before boiling, then top up with the remaining sparkling wine. Pour into a shallow container and freeze for at least 5-6 hours. Stir the mixture with a fork every half hour until it has the consistency of coarse snow. Mix the brown sugar and chili flakes. Rub the cut surface of half a lime onto the rim of the glass, then dip the rim into the prepared sugar mixture. Turn the glass upside down and let the sugar dry on the rim. Pour the granita into 4 glasses and serve.
