Sparkling wine risotto from the Thermomix

Ingredients for 3 servings:

  • 250 g dry sparkling wine
  • 80 g onion(s)
  • 10 g olive oil
  • 10 g butter
  • 200 g rice (risotto rice)
  • 500 g vegetable stock
  • e.g. parsley

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Add the onions to the mixing bowl and chop for 5 seconds on speed 5. Add the olive oil and butter and steam for 2 minutes on speed 1. Now add the risotto rice and steam for another 1 minute on speed 1. Add the sparkling wine and vegetable stock and steam for another 40 minutes on speed 1; the time also depends on the type of rice. Sprinkle with fresh parsley before serving. Fish is especially good with this dish; I usually serve it with salmon.
