Ingredients for 1 servings:

  • 200 g spiced speculatius biscuits
  • 100 g ladyfingers
  • 100 g butter, room temperature
  • 250 g quark
  • 250 g yogurt
  • 125 g sugar
  • 2 tsp speculatius spice
  • 6 sheets of white gelatin
  • 500 g cream
  • 150 g cream
  • 1 tbsp cinnamon powder
  • 12 pieces of chocolate decoration

Instructions

Working time approx. 45 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 45 minutes

Refrigerator cake – festive winter cake with spiced speculatius

Crumble the spiced speculatius biscuits and ladyfingers in a freezer bag. Mix the crumbs well with the room-temperature butter and pour evenly into a 26cm springform pan lined with baking paper. Press down firmly and let set in the refrigerator. Mix the quark, yogurt, sugar, and speculatius biscuit spice. Soak the gelatin leaves in cold water according to the package instructions, then squeeze out the excess water and dissolve over low heat. First, level with a little of the quark mixture, then add the entire mixture to the quark. Whip the cream until stiff and fold into the quark mixture. Spread everything over the crumb base and smooth it down. Let set in the refrigerator for several hours. Remove the springform pan. Sprinkle the cake surface with cinnamon. For a beautiful result, use a stencil. For decoration, whip the cream until stiff and pipe 12 dots onto the cake using a piping bag fitted with a star nozzle. Place a chocolate decoration on each dot.
