Ingredients for 70 servings:
- 300 g flour
- 125 g sugar
- 100 g ground almonds
- 200 g butter
- 3 eggs, including the yolk
- 1 pkt. Spekulatius spice (16g)
- 3 pts vanilla sugar
- 1 pinch of salt
- 1 tsp cinnamon
- 100 g powdered sugar
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Knead flour, sugar, almonds, butter, egg yolks, speculatius spice, 1 packet of vanilla sugar, and salt into a smooth dough. Cover and chill for about 1 hour. Preheat oven. Form the dough into small, approximately 6 cm long strands and roll them into croissants. Place the croissants on a baking sheet lined with parchment paper and bake on the middle rack at 175 degrees Celsius for 13-18 minutes. Mix together powdered sugar, 2 packets of vanilla sugar, and cinnamon, and carefully roll the croissants in it while still warm. The cooled speculatius croissants can be stored in airtight containers.
