Spelt and zucchini pan

Ingredients for 4 servings:

  • 1 m.-large zucchini
  • 1 m.-sized onion(s)
  • 4 garlic cloves
  • 200 g feta cheese
  • some oil
  • 250 g spelt like rice (pre-steamed spelt)
  • 500 ml vegetable broth, hot
  • 4 tbsp tomato paste
  • 1 tsp sweet paprika powder
  • ½ tsp paprika powder, hot
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Quarter and slice the zucchini, peel and dice the onion. Finely dice the garlic. Cut the feta into small pieces. Heat the oil in a large pan and fry the finely chopped onion until translucent. Add the spelt and fry for about 5 minutes, stirring. Add the zucchini and fry briefly. Deglaze with the hot vegetable stock. Stir the tomato paste and spices into the sauce and add the garlic. Cook with the lid on and over low heat until the spelt is tender. Add a little more liquid if needed. Finally, fold in the feta and let it melt for 1-2 minutes.
