Fresh and colorful summer salad

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 can of corn
  • 3 bell peppers, red, yellow and green
  • 1 pack of feta cheese or mozzarella
  • n. B. onion(s)
  • e.g. tomato(s)
  • 1 can of tuna, possibly instead of cheese
  • Fresh herbs to taste, e.g. parsley, chives, dill
  • oil
  • Vinegar
  • 250 ml natural yogurt
  • Salt
  • Sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and dice the cucumber. Dice the bell peppers. Drain the corn and add everything to a salad bowl. Dice the feta or mozzarella and add it. Add diced onions and/or tomatoes, if desired. Mix the yogurt with a little oil and season with vinegar, sugar, and salt. Stir in the finely chopped fresh garden herbs and toss the dressing with the salad ingredients. I’ve also used tuna instead of feta; it tastes great if you like fish!
