Ingredients for 1 servings:
- 400 g spelt flour type 630
- 40 g flaxseed
- 20 g hemp seeds
- 60 g millet
- 1 tbsp bread spice mix, purchased or homemade, freshly ground
- 1 packet of dry yeast
- 3 tsp salt
- 1 ½ tbsp sugar
- 1 tbsp vinegar, light
- 350 ml water, warm
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix the dry ingredients thoroughly, then add the vinegar and water and mix with a dough hook. Pour the dough into a loaf pan. Place the pan in a cold oven and bake at 200°C (top/bottom heat) for 60 minutes. The hemp seeds make the bread extra crispy; if you don’t like them, grind the seeds in a mortar.
