Ingredients for 2 servings:

  • 200 g spelt flour (type 630)
  • 1 egg(s)
  • 2 tbsp oil
  • 2 tbsp water
  • some salt
  • salt water

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 25 minutes

Combine all ingredients except the salted water and mix into a dough. Knead the dough in the food processor for a while. It should be fairly firm and not sticky. Since spelt flour takes time to expand, refrigerate the dough for at least 1 hour. Then knead the dough thoroughly again, roll it out very thinly, and cut into thin strips (or use a pasta machine). Bring salted water to a boil, but only add the pasta to simmering water. The water should not be boiling. Cooking time: approx. 5 minutes.
