Whole-wheat spaetzle

Ingredients for 4 servings:

  • 300 g flour (wholemeal spelt or wheat)
  • 150 ml water
  • 3 eggs
  • 1 tsp salt or granulated vegetable stock
  • 1 tbsp oil (olive or sunflower oil)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the ingredients into a dough and let it rest for about 1 hour. Bring a pot of water to a boil, add a little salt or vegetable stock, and add the dough in portions to the boiling water using a spaetzle grater (or a board). Let it rest briefly, then remove the finished spaetzle with a slotted spoon and keep warm.
