Spelt pancakes "Caprese"

Ingredients for 4 servings:

  • 250 g wholemeal spelt flour
  • 2 eggs
  • 150 ml milk or condensed milk
  • 50 ml mineral water
  • Salt
  • 500 g tomatoes
  • 150g mozzarella
  • Basil, fresh
  • Oil for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Mix flour, eggs, milk, mineral water, and salt into a batter and let it swell for a few minutes. Remove the stems from the tomatoes and slice them thinly. Grate the mozzarella. Heat a pan with a little oil. Pour a portion of batter into the pan and spread it evenly. Top the batter with tomatoes and mozzarella, add a little salt, and cover. Reduce the heat until the mozzarella has melted. Serve the pancakes on plates and garnish with basil.
