Sauerkraut – Patties III

Ingredients for 4 servings:

  • 40 g ginger, finely chopped
  • 15 olives, black or stone (brine), finely chopped
  • 250 g sauerkraut, finely chopped
  • 1 apple, approx. 200 g
  • 120 g buckwheat, ground
  • 13 peppercorns, with ground
  • 1 tsp salt
  • 1 pinch(s) of sugar
  • Oil, for frying

Working time approx. 30 minutes; Total time approx. 30 minutes

gluten-free, egg-free, dairy-free, vegan

Grate the apple around the cracklings. Add the ginger, olives, sauerkraut, salt, and sugar, and mix. Add enough ground buckwheat and pepper to form a pliable dough (still soft and moist). With wet hands, form patties, roll in the remaining buckwheat (use as breading), place in the hot oil, reduce the heat, and cook on both sides. Cover the pan with a lid. My own recipe.
