Spread the love

Ingredients for 1 servings:

  • 750 g Flour (wholemeal spelled flour)
  • 500 ml water
  • 42 g yeast
  • 2 tsp salt

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

baked with a burst of steam

Measure 500 ml of lukewarm water. Dissolve the yeast in approximately 100 ml of water (of the 500 ml). Mix the wholemeal spelt flour with the remaining water, salt, and the dissolved yeast for about 5-10 minutes, until the dough becomes tough. Let it rise for only about 15 minutes. With moistened hands, form peach-sized rolls and place them on a baking sheet. Do not let the formed rolls rise any longer. Immediately place them in the oven preheated to 250 degrees Celsius (480 degrees Fahrenheit). Add 1 cup of water to the bottom of the oven. (This burst of steam will make the rolls rise beautifully.) If you want the rolls to have a cut, score them with a damp knife. Baking time: 10 minutes at 250 degrees Celsius (480 degrees Fahrenheit), 10 minutes at 200 degrees Celsius (400 degrees Fahrenheit).
