Ingredients for 1 servings:
- 3 eggs
- 250 g sugar
- 1 tsp cinnamon
- ½ tsp clove powder
- 30 g candied lemon
- 30 g candied orange peel
- 1 tbsp rum
- 250 g almonds, peeled, chopped
- 200 g flour
- ½ tsp baking powder
- 200 g powdered sugar
- 4 tbsp lemon juice
- Fat, for the tray
- Flour, for the baking sheet
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Whisk the eggs and sugar until very fluffy. Stir in the cinnamon, cloves, finely chopped candied lemon and orange peel, and rum, then mix in the chopped almonds. Stir in the flour, sifted with baking powder. The amount of flour needed depends on the size of the eggs; the batter should be spreadable. Spread the batter onto a greased and floured baking sheet. Bake for about 20-25 minutes at 150°C (top/bottom heat). Cut into small sticks immediately after baking. Make a lemon glaze from the powdered sugar and lemon juice and brush the sticks with it.
