Ingredients
 

  • 10 Pc. Red chilli pepper
  • 8 Pc. Clove of garlic
  • 4 Pc. Fresh shallot
  • 1 tbsp Paprika powder
  • 0,5 tsp Coriander powder
  • 2 tsp Lemongrass
  • 0,25 tsp Ginger powder
  • 0,5 Pc. Lime
  • 4 tbsp Fish sauce
  • Salt
  • Oil
  • Water

Instructions
 

"Gerichte-Geschichte"

  • The "Red Chili" paste made from Thai red chilli is a base for many dishes and therefore versatile, but it is very spicy so use it sparingly and in doses.

preparation

  • Chop the chilli and shallots.
  • Sweat the chillies and onions in a little oil (rapeseed oil or Asian peanut oil), press in the garlic and stir in the paprika powder. Roast the whole thing briefly.
  • Deglaze with plenty of water and stir in the remaining spices.
  • Squeeze in the juice of half a lime, stir in the zest from the peel.
  • Bring to the boil, then simmer on a low level and reduce to the desired paste-like consistency.
  • Finally season with fish sauce and salt and puree with a hand blender.

For longer durability

  • Pour into a boiled glass and cover with oil, put in a cool place.
