Spicy banana cream soup

Ingredients for 8 servings:

  • 6 bananas
  • 3 onions
  • 3 cloves garlic
  • 3 stalk(s) Celery
  • 3 carrots
  • 2 peppers, red
  • 5 tbsp oil (sesame oil)
  • 500 ml orange juice
  • 1 liter vegetable broth
  • 400 ml coconut milk
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely chop the onion and garlic. Peel the carrot and finely dice it along with the celery. Cut the bell pepper, remove the seeds, and finely chop it. Sauté the onion and garlic in hot sesame oil for 3 minutes, then add the carrot and celery and sauté for 4 minutes. Peel and finely dice the bananas, then add them to the pot along with the chopped bell pepper and sauté for 10 minutes. Deglaze with the vegetable stock, coconut milk, and orange juice and continue cooking for about 20 minutes. Purée with a hand blender and season with salt.
