Spicy Cake with Sun-dried Tomatoes and Goat Cheese

  • 3 Stems Basil
  • 4 Stems Thyme
  • 45 g Pine nuts
  • 100 g Tomatoes dried in oil
  • 50 g Grated Emmental
  • 250 g Flour
  • 1 packet Baking powder
  • 3 Eggs
  • 75 ml Olive oil
  • 100 ml Milk
  • 150 g Goat cream cheese
  1. Wash the basil and thyme, shake dry, pluck the leaves off and chop finely. Roast pine nuts in a pan without fat, turning, remove. Drain the tomatoes and cut or chop them into pieces. Pluck the goat cheese into pieces.
  2. Mix eggs, oil and milk in a bowl. Mix the flour and baking powder, then stir slowly into the egg-milk mix. Stir in goat cheese, Emmental cheese, pine nuts, chopped tomatoes and herbs.
  3. Fill the dough into a loaf pan (approx. 11 x 25 cm) that has been greased and sprinkled with flour or a silicone form rinsed with cold water. Bake in the preheated oven at 200 ° C for about 40 minutes. Cover with baking paper after approx. 30 minutes. Let the cake cool for about 15 minutes, then turn it out and let it cool on a wire rack.
