Ingredients
- 2 Bundles Arugula
- 500 g Cherry tomatoes
- 8 Pc. Mushrooms
- 200 g Goat cheese Gouda in slices
- 1 Pc. Onion
- 4 tbsp Bianco balsamic vinegar
- 6 tbsp Olive oil
- 2 tbsp Cream
- 2 tsp Hot mustard
- 2 tbsp Pine nuts
- Salt, pepper, honey
Instructions
- Prepare the arugula bite-sized, halve or quarter the tomatoes (depending on size), cut the mushrooms into slices, roast the pine nuts in a small pan without fat. Cut the goat cheese Gouda cheese into small cubes, place on baking paper or aluminum foil and heat up briefly in the oven (until it "sweats" and becomes slightly soft)
- Make a dressing from onion cubes, vinegar, oil, mustard, salt, pepper, honey and herbs. Arrange the rocket with mushroom slices and cherry tomatoes on a large platter, pour slightly warm cheese cubes over it, sprinkle pine nuts over it and pour the dressing over it. We love him!
