Spicy Carrot and Chickpea Waffles

for the waffle iron:
- 1 Pc. Egg
- 75 g Grated cheese z. B. Gouda
- 100 ml Milk
- 2 tbsp Chopped parsley
- 1 tsp Tartar baking powder
- Salt pepper
- 2 tbsp Olive oil
- 2 Pc. Roughly grated carrots
- 1 tsp Turmeric to taste
- 1 tsp Dijon mustard at will
- Frying oil or coconut oil
- Mix the dough ingredients together well, adding the carrot rasps at the end. Let the dough soak for a few minutes. If it is too thin, add some more chickpea flour, in the opposite case just stir in some mineral water or additional milk.
- Grease the waffle iron and fry the waffles one after the other. The waffles taste good warm and cold. Instead of carrots, you can also use a small zucchini.
- Waffles can be served with a salad. B. enough as a starter to a menu. By using different types of vegetables or cheese, they always taste different. If you use Parmesan, it is better to use a little less, as it is very salty.
