Spicy cauliflower curry

Ingredients for 4 servings:

  • 1 cauliflower
  • 1 onion(s), chopped
  • 1 can/n tomatoes, peeled, diced
  • 2 cloves garlic, finely chopped
  • 2 tbsp curry powder
  • 1 tsp paprika powder, hot
  • some coriander powder, to taste
  • some cumin powder (cumin), to taste
  • 200 ml vegetable stock
  • 2 tbsp curry paste, Indian, mild – then other spices only as needed
  • yogurt
  • Mango chutney

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Sauté the onions until translucent, add the garlic. Then add the cauliflower florets and the spices. Then add all the wet ingredients and simmer until tender, depending on how hard you like the cauliflower. Serve with rice. Stir the yogurt until creamy and drizzle over the dish, if desired. Serve with mango chutney, if desired.
