Spicy corn salad

Ingredients for 2 servings:

  • 2 corn cobs, fresh
  • 1 garlic clove(s)
  • 1 Pepper
  • 1 spring onion(s), depending on the size maybe a little more
  • e.g. Parmesan or Pecorino
  • e.g. sea salt
  • 1 lime(s)
  • 1 tbsp butter
  • some oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Remove the corn kernels from the cob with a knife. Finely chop the garlic and chili peppers. Slice the spring onions into thin rings. Grate the cheese. Heat the oil in a pan and fry the corn kernels until crisp. Reduce the heat and fry the garlic and chili peppers briefly over medium heat; otherwise, the garlic will become bitter. Season with sea salt and lime juice. Finally, add the butter and let it melt. Serve the mixture in a shallow dish or on a large plate. Sprinkle with the spring onions and cheese and enjoy the salad lukewarm. The salad tastes great with grilled meat or with baguette and herb butter.
