Spicy mango salad

Ingredients for 2 servings:

  • 1 small mango(s)
  • 50 g feta cheese or sheep’s cheese
  • 2 tbsp lemon juice
  • 1 tbsp olive oil, good quality
  • Chives, approx. 10 stalks
  • salt and pepper
  • 1 chili pepper(s), optional

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Peel the mango and remove the stone. Dice the flesh. Wash the chives, shake dry, and cut into small rings. Combine the lemon juice with olive oil, salt, and pepper until smooth. Pour over the mango cubes. Finely crumble the feta or sheep’s cheese and sprinkle over the top. Add the chives and mix everything together gently. If you like it spicier, add 1 chili/pepper, finely diced. Prepare the salad about 1 hour before eating. Store in the refrigerator and remove about 15 minutes before serving. This way, it will be slightly chilled but not too cold.
