Spicy melon salad

Ingredients for 2 servings:

  • 40 g pine nuts
  • 1 kg melon(s) (honeydew melon)
  • 1 tbsp balsamic vinegar
  • 4 tbsp oil (olive oil)
  • 1 tsp honey
  • some salt
  • some pepper
  • some basil
  • 100 g ham, raw
  • 50 g Parmesan

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Roast the pine nuts without fat for about 3 minutes. Halve and deseed the honeydew melon, scoop out balls, and mix with balsamic vinegar, olive oil, honey, pine nuts, basil, salt, and pepper. Fill the melon halves (level the sides first), top with prosciutto. Thinly shave Parmesan cheese and garnish the salad with them. Serve with baguette.
