Spicy noodle and mushroom stir-fry

Ingredients for 1 servings:

  • 75 g spiral noodles
  • 75 g mushrooms
  • 1 tbsp crème fraîche, alternatively sour cream
  • 50 ml vegetable stock
  • 1 egg(s)
  • 40 g cheese, grated
  • ¼ onion(s)
  • Chives, fresh, a few stalks
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

with hard-boiled egg, fine cheese, vegetarian

Cook the pasta according to the package instructions. Hard-boil the egg. Prepare the mushrooms and slice them thinly. Rinse the chives, chop them, and cut them into rings. Dice the onion. Heat the butter in a pan, fry the onions, and then add the mushrooms. Pour in the stock and, once cooled slightly, stir in the crème fraîche and chives. Season the resulting sauce. Preheat the oven to 180°C (top/bottom heat). Peel the egg and dice it. Grease a baking dish. Layer the drained pasta in the baking dish, stir in the egg, half of the cheese, and the sauce. Finally, sprinkle everything with the remaining cheese. Place the casserole on the top rack of the oven for about 15 minutes, until the cheese has melted and is lightly browned.
