Spicy Pork Fillet with Spicy Sauce, Broccoli and Crispy Croquettes

Ingredients
 

Spicy pork tenderloin:

  • 1 Pork fillet approx. 600 g
  • 2 tbsp Sweet soy sauce
  • 2 tbsp Dark soy sauce
  • 2 tbsp Thin soy sauce
  • Coarse sea salt from the mill
  • Colorful pepper from the mill
  • Sweet paprika
  • Rubbed marjoram
  • 10 Flakes of butter

Spicy sauce;

  • 250 ml Meat broth (1.5 tsp instant)
  • 1 tbsp Tapioca starch
  • 3 tbsp Whipped cream
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill
  • 1 tsp Sambal Manis

Broccoli:

  • 500 g Broccoli / trimmed in florets approx. 300 g

Instructions
 

Spicy pork tenderloin:

  • Clean / remove the tendons, wash, pat dry with kitchen paper and marinate in soy sauce (2 tablespoons of sweet soy sauce, 2 tablespoons of dark soy sauce and 2 tablespoons of thin soy sauce) for about 30 minutes. Remove from the marinade and season with coarse sea salt from the mill, coarse pepper from the mill, sweet paprika and grated marjoram, put flakes of butter in an ovenproof dish, place the pork fillet on top and bake in the preheated oven at 200 ° C for approx. 30 - 35 Cook / bake for minutes. Remove the pork fillet, wrap it in aluminum foil and let it rest for about 10 minutes.

Spicy sauce:

  • Remove the roast set from the baking tin with meat broth (250 ml), pour into a small saucepan, pour the marinade over it and sprinkle with coarse sea salt from the mill, colored pepper from the mill, sambal manis (1 teaspoon) and whipped cream (3 tbsp ) season / season to taste and finally stir in the tapioca starch mixed in a little cold water. As soon as the sauce thickens, pull the pan off the oven.

Broccoli:

  • Clean the broccoli, cut into florets, place in a steamer insert and put 1 liter of salted water (1 teaspoon salt) in the saucepan underneath and steam with the lid closed for about 8-10 minutes.

Crispy croquettes:

  • Place the crispy croquettes on a baking tray lined with baking paper and cook in the oven until crispy according to the instructions on the package.

Serve:

  • Cut the pork tenderloin into slices. Add / stir the meat juice into the spicy sauce. Serve spicy pork fillet with a spicy sauce, broccoli and crispy croquettes, garnished with tangerine pieces.
