Ingredients for 4 servings:

  • 800 g potato(s) (waxy)
  • 200 g carrot(s)
  • 3 onions
  • 250 g Cabanossi
  • 1 pot of basil
  • 4 tbsp oil
  • Salt
  • pepper
  • 4 eggs

Instructions

Wash the potatoes and cook for about 20 minutes. Peel and roughly dice the carrots. Roughly dice the onions. Drain the potatoes, rinse them, and let them cool briefly. Then peel them and cut them into approximately 2cm cubes. Heat the oil in a pan and sauté the diced onion and carrot over medium heat for about 5 minutes. Add the potatoes, season with salt and pepper, and fry until light brown. Then add the sliced ​​Cabanossi and continue frying for another 3-4 minutes over low heat. Sprinkle the chopped basil over the top, stir, and crack the eggs over the potato pan. Cover and continue frying until the eggs are set.
