Spicy potato soup

Ingredients for 2 servings:

  • 2 onions
  • 150 g potatoes
  • 100 g carrot(s)
  • 400 g vegetable stock, possibly more
  • some oil
  • salt and pepper
  • Cayenne pepper or chili
  • possibly sour cream
  • possibly ham
  • possibly leek
  • possibly crabs
  • possibly sausages (Wiener)

Working time approx. 10 minutes; Total time approx. 10 minutes

very easy and quick

Peel the potatoes and carrots. Finely chop the onions, potatoes, and carrots. Heat the oil in a pot and sauté the onions. Then add the potatoes and carrots. Add vegetable stock. Season with salt and simmer for 20 minutes. When it’s soft enough, puree everything and season generously with pepper and cayenne pepper. Stir occasionally and taste to prevent it from becoming too spicy. If the soup is too thick, simply stir in a little more stock. You can add various ingredients to the soup to taste, such as 1-2 tablespoons of sour cream, diced ham, leeks, small shrimp, or, of course, Vienna sausages.
