Spicy pumpkin and shrimp omelette

Ingredients for 1 servings:

  • 300 g pumpkin(s), preferably butternut
  • 1 chili pepper(s), fresh red
  • 1 onion(s), chopped
  • 2 tbsp olive oil
  • 125 g shrimp(s) (pack from the refrigerated section)
  • 3 eggs
  • 3 tbsp milk
  • some salt and pepper

If you like it spicy…

Dice the pumpkin, chop the onion, and finely chop the chili pepper. Heat 2 tablespoons of olive oil in a pan (I used a 21 cm diameter pan). Stir-fry the onion, pumpkin, shrimp, and chili for about 10 minutes. The pumpkin should still be firm to the bite. Whisk 3 eggs with 3 tablespoons of milk, season with salt and pepper, and pour over the mixture in the pan; let it set. Serve with a fresh salad. This is a main meal for one person.
