Spicy spaghetti salad with garlic and arugula

Ingredients for 8 servings:

  • 500g spaghetti
  • 500 g arugula
  • 375 g tomatoes, chopped, from the can
  • 3 garlic cloves, fresh
  • 150 ml olive oil
  • 8 tbsp vinegar
  • some water
  • 8 drops of Maggi
  • 1 tsp, levelled sugar
  • 1 tsp chili powder
  • 2 tbsp thyme, dried or fresh
  • 2 tbsp rosemary, dried or fresh

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours

As a barbecue side dish or just a treat on its own!

While the spaghetti is preparing according to the package instructions, mix together a salad marinade with the vinegar, a little water, the Maggi, and the sugar. Then finely chop the garlic. As soon as the pasta is ready, place it in a sieve and rinse it with cold water. Heat the olive oil in the hot pasta pot and cook the garlic with the thyme and rosemary. Caution: Do not overcook, or the garlic will brown. Put the cold pasta in a bowl and mix with the oil, salad marinade, and tomatoes. Fold in the washed arugula, season the salad with the chili powder and a little Maggi, and let it sit for 1-2 hours. Adjust the seasoning again just before serving. You now have the perfect spaghetti salad that everyone is guaranteed to love.
