Spicy sweet potato and peanut soup

Ingredients for 6 servings:

  • 1 large sweet potato(s), diced
  • 6 spring onions, cut into rings
  • 2 tbsp peanut butter, creamy
  • 3 cloves garlic, finely chopped
  • 1 ½ liters vegetable broth
  • 1 tsp cayenne pepper
  • possibly parsley and roasted peanuts for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Peel and dice the sweet potatoes. Peel or trim and finely chop the garlic and spring onions. Place the sweet potatoes, spring onions, garlic, peanut butter, and cayenne pepper in a food processor and puree. Bring the vegetable broth to a boil, add the puree, and cook for 3 minutes. Reduce heat and simmer for another 30 minutes. Optionally, garnish with parsley and roasted peanuts.
