Spicy tomato fried rice

Ingredients for 2 servings:

  • 250 g rice (parboiled rice)
  • 550 ml water, lightly salted
  • some olive oil
  • 1 onion(s)
  • 2 garlic cloves
  • 2 tbsp tomato paste
  • 1 handful of olives
  • 1 handful of pepper
  • n. B. cheese
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the rice in salted water for about 20 minutes, until the rice has absorbed all the water and reached the right consistency. Drain any excess water in a sieve, if necessary. In the meantime, dice the onion and mince the garlic, as well as slice the olives and chili peppers. Heat olive oil in a non-stick pan and fry the rice until vigorous. After a few minutes, add the onion and garlic and fry. Then add the tomato paste. Stir well every now and then. Finally, add the remaining ingredients (olives, chili peppers, cheese) to the pan, continue frying and stirring. Season with pepper and salt. Let it fry for a few minutes. Transfer to a plate and serve with natural yogurt, tzatziki, sour cream, or something similar, depending on your taste. Tip: This dish is also perfect for using up other leftovers that need to be used: tomatoes, chili peppers, or other vegetables certainly wouldn’t hurt. It would also work well with minced meat or chicken.
