Vegetable rice with green curry

Ingredients for 1 servings:

  • 1 tbsp oil for sautéing
  • 2 pointed peppers, red
  • 1 carrot(s)
  • 200 g creamed spinach or leaf spinach, frozen
  • 125 g rice or wild rice
  • 1 tbsp curry paste, green

Clean and dice the bell peppers and carrot, then sauté them lightly in oil. Add the spinach and rice and stir frequently over low heat. The frozen spinach should initially provide enough liquid in the pot, which the rice will absorb as it cooks. Add water if necessary. Depending on the type of rice, the cooking time varies between 10 and 30 minutes. When the rice is almost tender, add the curry paste and season with salt and pepper. This dish can be eaten as a main meal, but also as a side dish to fish or meat. Tip: Depending on taste and availability, you can vary the amount of curry and the vegetables used. For example, you can make it hearty with kale or some feta cheese.
