Spicy tomato sauce with shrimp

Ingredients for 2 servings:

  • 150 g shrimp(s)
  • 200 g cherry tomatoes
  • 1 tbsp tomato paste
  • 1 small onion(s), red
  • 2 cloves garlic
  • some stalks of herbs, e.g. rosemary, basil, etc.
  • olive oil
  • salt and pepper
  • e.g. chili
  • Sugar
  • 250 g pasta
  • e.g. Parmesan, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and finely chop the garlic. Briefly fry the prawns in olive oil with a little garlic (or a little lemon zest if you like) and set aside. Finely chop the onion and fry in olive oil. Add the remaining garlic and fry briefly. Now reduce the heat and add the sugar and tomato paste. Halve the cherry tomatoes and add to the pan, letting them caramelize slightly. In the meantime, put the pasta water on the boil. When the tomatoes have melted slightly, add the chili and season with pepper and salt. Let it simmer briefly. Cook the pasta and add 2-3 ladles of the pasta water to the sauce. Finally, add the herbs and fold in the pasta. If you like, you can add a little more Parmesan cheese.
