Ingredients for 2 servings:
- 250 g tortellini, with tofu or vegetable filling
- 4 tbsp olive oil
- 1 medium-sized onion(s), diced
- 1 chili pepper(s) (Serrano), cut into fine rings
- 1 can of tomatoes, pureed
- 10 cherry tomatoes, halved
- 1 ½ tsp basil
- ¾ tsp oregano
- ¼ tsp thyme
- ⅛ tsp chili powder, spice level 5, amount according to taste
- salt and pepper
- 125 ml cream (soy)
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Tortellini with tomato and chili sauce
Prepare the tortellini according to the package instructions. Add the olive oil to a pan and sauté the onion and chili until translucent. Then add the cherry tomatoes and fry briefly. Add the passata and seasonings, cover, and simmer on low heat for about 10 minutes, until the cherry tomatoes are easily crushed. Stir occasionally. Then stir in the soy cream and bring to a boil briefly. Finally, stir in the tortellini and serve.
