Spicy vegetable pan with gnocchi

Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 2 garlic cloves
  • 250 g mushrooms, brown
  • 250 g zucchini
  • some olive oil
  • 500 g gnocchi
  • salt and pepper
  • n. B. Herbs, Italian
  • 2 tbsp soy sauce
  • 125 g cherry tomatoes
  • e.g. basil
  • e.g. Parmesan, freshly grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely chop the onions and garlic, quarter the mushrooms, and slice the zucchini. Halve the cherry tomatoes. Heat a pan with a little olive oil and fry the gnocchi until golden brown. Transfer the gnocchi to a bowl and set aside. Add a little more olive oil to the pan and fry the garlic, onions, zucchini, and mushrooms. Season with salt, pepper, and Italian herbs, and deglaze with soy sauce. Add the tomatoes and some fresh basil and fry briefly. Fold in the gnocchi and serve warm. Tastes delicious with a little Parmesan cheese.
