Ingredients for 2 servings:
- 160 g rice, uncooked
- 1 bell pepper(s), green
- 1 bell pepper(s), yellow
- 1 small onion(s)
- 1 clove(s) garlic
- 1 small zucchini
- 200 g tomatoes, chunky, from the can
- 60 g sheep’s cheese
- salt and pepper
- ½ tsp red curry paste
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cook the rice in twice the amount of salted water. Dice the bell pepper, onion, and zucchini, and press the garlic clove into the vegetables. Sauté the vegetables in a pan with water until tender. Then add the tomatoes to the vegetables and bring to a boil. Season the sauce with salt, pepper, and curry paste. Dice the feta cheese and add half of it to the sauce. Serve the sauce with the rice and sprinkle with the remaining feta cheese.
