Ingredients for 4 servings:
- 200 g potatoes
- 500 g asparagus, from the can
- 35 g onion(s), mixed, frozen
- 300 g leaf spinach with Gorgonzola
- 100 g cheese, grated
- salt and pepper
- 1 tbsp olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes
Preheat the oven to 200°C fan/convection oven. Wash, peel, and dice the potatoes. Boil the potatoes in salted water for 8 minutes. Drain the water. Cut the asparagus into pieces. Grease a baking dish with oil. Add the asparagus, diced potatoes, and onion mixture. Break up the frozen spinach and add it in small pieces. Season the vegetables with salt and pepper and sprinkle with grated cheese. Bake the casserole in the oven for 25 minutes.
