Ingredients for 6 servings:
- 150 g wholemeal flour
- 100 g butter or 20 g butter and 80 g low-fat curd cheese
- 1 egg(s)
- ½ tsp salt
- Fat for the mold
- 400 g leaf spinach or creamed spinach
- 2 onions, diced
- 2 garlic cloves, diced
- 1 tbsp olive oil
- salt and pepper
- nutmeg
- 125 g quark
- 75 g crème fraîche
- 2 eggs
- 75 g sheep’s cheese

quick and easy quiche, with few ingredients.
For the base, knead the first 6 ingredients into a shortcrust pastry and chill for 30 minutes. Transfer to a greased dish and form a rim. Sauté the diced onions and garlic in the oil, add the spinach, and season with spices. Add the remaining ingredients and mix well. Pour the mixture onto the pastry. Bake the quiche in a preheated oven at 180°C (top/bottom heat) for about 30 minutes. Tip: The quiche dough is ideal for any type of savory tart. If you want to save calories, you can replace some of the butter with low-fat quark (20g butter and 80g low-fat quark also works very well). If you prefer, you can also use creamed spinach; in this case, simply omit the crème fraîche.
