Spinach and Feta Frittata

Ingredients for 2 servings:

  • 450 g leaf spinach, frozen
  • 7 eggs
  • 100 g feta cheese
  • 100 g cherry tomatoes
  • 1 onion(s)
  • 1 garlic
  • salt and pepper
  • nutmeg

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Thaw the frozen spinach (best done the day before), blanch the fresh spinach, and chop it up a bit. Preheat the oven to 200°C (top/bottom heat). Gently fry the onion and garlic in a pan until translucent. Meanwhile, whisk the eggs and spinach well and season with salt, pepper, and nutmeg. Allow the onions and garlic to cool slightly and then stir in. Transfer the mixture to a springform pan lined with baking paper or an ovenproof, nonstick pan. Halve the tomatoes, dice the feta, and spread both on top. Bake in the oven for 40-50 minutes to set. Serve with a baguette spread with a little butter.
