Spinach and feta muffins

Ingredients for 1 servings:

  • 500 g spinach, chopped, frozen
  • 3 eggs
  • 1 cup of sour cream, approx. 200 g
  • salt and pepper
  • nutmeg
  • 200 g cheese, grated
  • 1 puff pastry, from the refrigerated section
  • 1 pack of feta cheese, approx. 200 g

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Thaw the spinach and squeeze out any excess moisture. Whisk together the eggs and sour cream and season with salt, pepper, and nutmeg. Combine the spinach and grated cheese with the egg mixture. Cut the puff pastry into 20 squares and place them in muffin cups (either silicone or paper). Divide the spinach mixture among the cups and crumble the feta cheese over the top. Bake the muffins in a preheated oven at 200°C (top/bottom heat) or 180°C (fan oven) for 30 minutes.
