Spinach and Gorgonzola Quiche

Ingredients for 1 servings:

  • 200 g flour
  • 100 g margarine
  • 1 egg(s)
  • 1 pinch of salt
  • 250 g fresh leaf spinach
  • 100g Gorgonzola
  • 2 onions
  • 2 garlic cloves
  • 150 g crème fraîche
  • 2 tbsp oil
  • 2 eggs
  • e.g. pine nuts

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours

Knead the dough from the eggs, flour, margarine, and salt. Wrap in cling film and refrigerate for 1 hour. Meanwhile, finely chop the onions and spinach leaves and fry them together in a pan with the oil. Whisk the Gorgonzola with the crème fraîche and the eggs, season with salt and pepper, and fold into the vegetables. After 1 hour, spread the dough evenly in the quiche dish and add the filling. Sprinkle with the pine nuts and bake at 200°C for 20-30 minutes. Serve with arugula and wine.
