Spinach, bacon and egg muffins

Ingredients for 1 servings:

  • 75 g spinach
  • 1 egg(s)
  • e.g. bacon (alternatively vegetarian bacon substitute)
  • some salt and pepper
  • nutmeg
  • 1 small potato(s), cooked, sliced

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash and trim the spinach, then blanch it in boiling salted water for one minute. Then drain and let it drain, pressing out the remaining water, for example with a fork. Cut a small piece of baking paper and line a muffin tin or similar with it. Preheat the oven to 180 degrees Celsius. Place the spinach in the tin and sprinkle with nutmeg, salt, and pepper. Then arrange the bacon and potatoes on top. Finally, crack the egg over the muffin and bake for about 15 minutes, until the egg is set.
