Spinach casserole

Ingredients for 4 servings:

  • 500 g spinach, frozen
  • 1,000 g ricotta
  • 5 eggs
  • 2 tbsp dill, chopped
  • 250 g cherry tomatoes
  • 150 g feta cheese
  • Sea salt
  • Black pepper, freshly ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat the oven to 160 degrees Celsius (325 degrees Fahrenheit). Thaw the spinach and squeeze out any excess moisture. Combine the spinach, ricotta, eggs, dill, salt, and pepper in a bowl and then transfer to a baking dish. Halve the tomatoes and arrange them cut-side up on top. Roughly crumble the feta and sprinkle over the top. Bake in the oven for about 1 hour, until the casserole is firm and lightly browned. Serve hot or cold.
