Mediterranean mayonnaise

Ingredients for 5 servings:

  • 3 egg yolks
  • 300 ml olive oil
  • 70 g tomatoes, sun-dried
  • 120 g bell pepper(s), red, roasted
  • 2 tbsp tomato ketchup
  • 4 cloves garlic
  • 1 tbsp lemon juice
  • 1 tsp salt
  • ¼ tsp white pepper, freshly ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the egg yolks and the remaining ingredients (except the olive oil) in a food processor and, with the motor running, slowly pour in the olive oil. Blend until a mayonnaise consistency forms. Season again with salt and white pepper, if desired.
