Spinach Frittata

Ingredients for 4 servings:

  • 6 large eggs (lightly whisked)
  • 1 cup milk
  • 250 g spinach, frozen (defrost)
  • 1 medium-sized onion(s), (dice finely)
  • ½ cup cheddar cheese, grated
  • ½ cup Parmesan cheese, grated
  • 1 large garlic clove(s) (crushed)
  • 1 tbsp parsley (finely chop)
  • Pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 180°C. Squeeze the water out of the spinach. Whisk together the eggs and milk. Add the spinach, cheese, onions, garlic, and pepper to the egg mixture and stir. Pour into a greased casserole dish and bake in the preheated oven for about 30 minutes. Serve with whole-grain bread.
