Ingredients for 4 servings:
- 6 large eggs (lightly whisked)
- 1 cup milk
- 250 g spinach, frozen (defrost)
- 1 medium-sized onion(s), (dice finely)
- ½ cup cheddar cheese, grated
- ½ cup Parmesan cheese, grated
- 1 large garlic clove(s) (crushed)
- 1 tbsp parsley (finely chop)
- Pepper, from the mill
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat the oven to 180°C. Squeeze the water out of the spinach. Whisk together the eggs and milk. Add the spinach, cheese, onions, garlic, and pepper to the egg mixture and stir. Pour into a greased casserole dish and bake in the preheated oven for about 30 minutes. Serve with whole-grain bread.
