Spinach noodles with avocado cream

Ingredients for 4 servings:

  • 400 g pasta (spinata glierini)
  • Salt
  • 2 large avocados, ripe
  • 300 ml cream, liquid
  • 100 ml vegetable broth, lukewarm
  • 25 g Parmesan, grated
  • Pepper, fresh, black, ground
  • some lemon juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

quickly prepared

Peel and pit the avocados, then immediately rub them with lemon juice, dice them, and place two-thirds of them in a tall bowl. Add the cream, broth, and cheese, and blend. Season with salt and pepper. Cook the pasta in plenty of salted water until al dente and toss with the avocado cream. Sprinkle with the remaining avocado cubes. Serve immediately. We sometimes sprinkle ricotta cheese and lightly toasted pine nuts on top.
