Spinach – Parmesan – dumplings

Ingredients for 4 servings:

  • 600 g potatoes, cooked
  • 500 g spinach
  • 1 egg(s)
  • 60 g flour
  • 60 g cornstarch
  • 80 g Parmesan, grated
  • 200 g carrot(s)
  • 1 onion(s)
  • 250 g minced meat, mixed
  • 1 tbsp tomato paste
  • 250 ml vegetable stock
  • 1 can of tomatoes, chopped
  • salt and pepper
  • nutmeg
  • oregano

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

On fruity minced meat sauce

Mash the potatoes. Clean the spinach and blanch it in salted water for about 2 minutes, squeeze it dry, and chop it. Mix the mashed potatoes with the egg, flour, starch, Parmesan cheese, and spinach, and season with salt, pepper, and nutmeg. With wet hands, form about 12 dumplings. If the dough is still too sticky, simply add a little flour. Cook in salted water for about 15 minutes and drain well. For the sauce, peel the carrots and dice them finely, along with the tomatoes and onion. Fry the onions, carrots, and minced meat in a little oil. When the meat is cooked, add the tomato paste, stock, and tomatoes. Season with oregano, salt, and pepper, and simmer for a few minutes. Toss the dumplings in a little butter in a pan and serve with the sauce.
