Spinach Quiche

Ingredients for 6 servings:

  • 250 g flour
  • ½ tsp salt
  • 125 g butter
  • 6 tbsp water, cold
  • 500 g spinach, preferably fresh
  • 2 onions
  • 3 tbsp butter
  • 2 garlic cloves
  • 3 tsp broth, granulated
  • 1 slice(s) cooked ham, thick slice, diced
  • 3 eggs
  • 125 ml cream
  • 2 tbsp breadcrumbs
  • 150 g cheese (Gouda, medium-aged), grated
  • salt and pepper
  • Butter for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the dough, knead together flour, salt, butter, and water. Wrap the dough in foil and chill for 30 minutes. Trim, wash, and roughly chop the spinach. This is best done with scissors, although you may need to remove the thick stalks. Dice the onions and sauté in the butter until translucent. Add the spinach and diced ham, cover, and sauté for about 5 minutes, then press in the garlic. Season with the granulated stock and a little pepper. Whisk the eggs with the cream and add a little salt and pepper. Roll out the dough and line a buttered quiche or springform pan. Press the dough up at the edges and pierce the base several times with a fork. Preheat oven to 175°C (350°F) for about 10 minutes (it works well without blind baking). Spread the spinach mixture over the dough. Sprinkle with the cheese. Pour the egg whites over the top and sprinkle with breadcrumbs. Bake at 175°C for approximately 35-40 minutes. You can also omit the ham. We love eating this quiche during the winter months.
