Spinach quiche

Ingredients for 4 servings:

  • 400 g spinach
  • 1 m.-sized onion(s)
  • 4 garlic cloves
  • Oil for frying
  • 4 tsp, heaped pesto, red
  • 300 g quark
  • 3 m.-sized eggs
  • 3 slices of mountain cheese, cut into small pieces
  • 1 pack of shortcrust pastry for a cake tin

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Clean and wash the spinach. Bring a large pot of salted water to a boil, add the spinach, bring to a boil briefly, and then remove. Now finely chop the onion and garlic and sauté in oil. Mix the quark, pesto, eggs, onion, garlic, and finely chopped cheese in a bowl. Line a cake tin with the shortcrust pastry. Spread the drained spinach over the shortcrust pastry and then pour the quark mixture over it. Bake in a preheated oven at 160°C (fan oven) for approximately 30-40 minutes.
