Spinach salad with goat cheese

Ingredients for 2 servings:

  • 150 g baby spinach
  • 8 basil leaves
  • 100 g goat cheese
  • 2 tsp pine nuts
  • 1 spring onion(s)
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 pinch(s) of salt and pepper

Working time approx. 10 minutes; Total time approx. 10 minutes

tasty and quick

Roast the pine nuts in a pan without fat. Then prepare the dressing. Finely chop the spring onions. Mix with lemon juice, pine nuts, olive oil, and balsamic vinegar. Season with salt and pepper. Trim the spinach. Toss the basil leaves and spinach with the dressing and arrange on plates. Cut the goat cheese into small cubes and portion them over the salad. Serve with couscous.
