Snow pea and tomato platter

Ingredients for 2 servings:

  • 200 g sugar snap peas
  • 150 g cherry tomatoes or date tomatoes
  • 150g mozzarella
  • Basil, fresh
  • 8 tbsp Balsamic vinegar di Modena (more if needed)
  • 3 tbsp linseed oil
  • Salt (wild garlic salt)
  • Long pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Blanch the cleaned snow peas in a little water until they reach the desired firmness. Halve the washed cherry tomatoes. Dice the mozzarella. Arrange the drained snow peas on a platter with the tomatoes and mozzarella. Sprinkle with basil, balsamic vinegar, linseed oil, wild garlic salt, and pepper. Serve after letting it marinate. Of course, you could also serve it fresh, but it will be more aromatic after it marinates.
